Easy Chicken Enchiladas


I am constantly looking for tasty, quick, and easy meals! Let’s face it, after working all day, running the kids here there and everywhere, the last thing I want to do is come home and make a complicated meal so I am more than happy to add this simple meal to my list of go to week night meals.

1 package of 10 medium size flour tortillas

1 package of chicken breast

32 oz jar of salsa of your choice

8 oz package of cream cheese

1 cup of shredded cheese (taco blend)

Preheat oven to 350. In a large skillet cook chicken breast till cooked through. Remove chicken from the skillet and either shred or cube chicken, to save even more time you can grab a precooked rotisserie chicken at the store and shred it. Add chicken back to the skillet, add the 8 oz package of cream cheese and half of the jar of salsa, cook until cream cheese is melted and all is blended. Spray a 9X13 baking dish with nonstick spray. Add a scoop of the chicken filling to each tortilla wrapping it like a burrito, place in the pan seam side down.


When all the tortillas are filled, pour the remaining salsa over the top of the enchilladas and top with shredded cheese.


Bake for about 20 minutes. Enjoy!
